Abenaki Pudding

Ingredients

  • 3/4 Cup Cornmeal
  • 2 Cups Water
  • 1 tspn Salt
  • 3/4 Cup Molasses
  • 1/2 Cup Milk
  • 2 Tbspn Butter
  • Cinnamon, Nutmeg, Ginger
  • Directions
    Whisk cornmeal into 2 cups almost boiling water, lower heat. Cornmeal will thicken as it cooks. Stir contantly, add butter and milk. Stir in molasses, add cinnamon, nutmeg and ginger to taste. Serve warm, with whipped cream or vanilla ice cream. Great as dessert after Nas8b8n – Three Sisters Soup. A quick variation to the Colonial New England offering that has to be baked.
